How To Make Banana Mud Bread

We don't bake often here at MUD but when we do, we always make sure to add some mud. Banana and mud paired together is our newest obsession. So we decided to share this with you. Banana Mud Bread; 

 

Ingredients

  • 1/2 stick (1/4 cup) butter or sub vegan butter, softened
  • 1/2 cup applesauce
  • 3 large Ripe Bananas
  • 2 large eggs
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon maple syrup
  • 2 cups All Purpose Flour
  • 1 cup brown sugar
  • 2 tablespoons MUD\WTR
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • *optional 1/2 cup walnut halves
  • *optional 1/2 cup semi sweet chocolate chips

Directions

  • Preheat oven to 350 degrees and grease a loaf pan with butter or non-stick spray
  • Add the softened butter, applesauce, and bananas to a large mixing bowl and mash with a fork
  • Add eggs, vanilla extract and maple syrup to the bowl and mix until evenly combined
  • In a separate large mixing bowl, whisk together the flour, brown sugar, MUD/WTR baking soda, salt, and cinnamon until evenly combined
  • *optional slowly mix in the walnut pieces and chocolate chips to the dry ingredients until mixed thoroughly
  • Add the dry ingredients to the wet ingredients and mix together until evenly combined
  • Pour the batter into prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center of the bread comes out clean
