Have you ever found yourself in the candy aisle of 7-11 after getting a touch too high? It’s OK. We all make mistakes. It’s part of growing up. You’re in the brightly lit sugar store so flummoxed by choices you’re forced to sit down so you don’t pass out.
Though most chocolate products contain some semblance to the cacao tree, raw cacao is as dissimilar to a Hershey bar as a Starbucks chai latte is to the real thing. During harvest, the seeds are extracted and fermented, however the processing of the seeds is what makes cocoa different from cacao. Cocoa is heated which results in a sweeter flavor, but the high temperatures burn off most of the healthy nutrients, while cacao is cold-pressed, retaining the living enzymes.
This is important since cacao is densely packed with magnesium, has 15x the antioxidants of blueberries. It also has an alkaloid that helps promote alertness by the name of Theobromine aka caffeine's more chill best friend.
If that's not enough, cacao contains phenylethylamine (PEA) which is known as the “love drug.” PEA interacts with dopamine, which regulates the brain’s reward response—Think chocolate on Valentine's Day. All this is to say that an ingredient in chocolate ironically has some serious life and love enhancing potential.
Cacao is a bean so what it lacks in water solubility it makes up for in its life-enhancing potential. For its antioxidants, magnesium, benefits, and rich flavor, cacao holds the prestigious title of the most abundant ingredient in MUD\WTR and it’s what makes our elixir look so damn dirty.
