The Mud office is filled with a wide array healthy snacks from almond butters to collagen bars; there's even a drawer full of dried mangos. We aren't really a Pizza Party crew, either. But when our in-house recipe guru came to us with this recipe, all diets were off. We have a feeling you might agree. So give these a try this weekend. Cinnamon Roll Mug Cake.
- ¼ cup gluten free baking flour
- ¼ tsp baking powder
- 2 tbsp almond milk
- 1 tbsp maple syrup
- ¼ tsp vanilla extract
- 1 tsp coconut oil
- 1 tsp MUD\WTR
- 1 tbsp coconut sugar
- ¼ tsp cinnamon
- Spray mug with cooking spray and then mix together flour, baking powder, milk, maple syrup, vanilla and oil inside. Add more milk if needed for desired consistency. You want the batter to stay thick, but not dry
- Whisk together brown sugar, cinnamon, and mud to sprinkle over the top of the mixture in mug. Use the tip of a knife to swirl cinnamon mix into the top of the batter
- Microwave on high for about 1 minute and 25 seconds. enjoy!
