Raw Mud Carrot Cake

If you've been assigned to bring the dessert this Thanksgiving, we got you covered. Someone's already gonna bring pumpkin pie so this is your time to shine. Dessert with mushrooms? Everyone's bound to give it a try. We give you the Raw Mud Carrot Cake.


  • 3 cups chopped carrots
  • ¾ cup pitted dates
  • 1 cup raw walnuts
  • ⅔ cup shredded coconut
  • 1 tbsp MUD\WTR
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ cup chia seeds
  • ¼ tsp salt
  • ½ cup raisins

Preparation (Cake)

  1. Add the carrots to the food processor first and process until shredded.
  2. Add remaining ingredients except the dates and process into small pieces.
  3. Add the dates last so it’s incorporated into the mix evenly.
  4. Press the cake base into an oiled round cake pan and set aside in the fridge while you make the frosting.

Ingredients (Frosting)

  • 2 cups raw cashews, soaked overnight
  • ⅔ cup coconut oil, melted
  • 1 cup maple syrup
  • 1 can coconut milk
  • 1 tbsp MUD\WTR
  • 2 tsp raw vanilla

Preparation (Icing)

  1. Add every ingredient into a high speed blender and blend until smooth.


  1. Remove the cake base from the fridge and pour the icing over the top
  2. Garnish it with carrot chips and walnuts
