Chickpea Mud Cookies

You’ve likely made cookies out of almond flour or coconut flour, but how about chickpeas? Yeah we haven't either, until today! So if you're craving something sweet but still want to add some mud to your life, try our flourless mud cookies. 

 Ingredients

  • 2 tsp MUD\WTR
  • 1½ cups cooked organic chickpeas
  • ½ cup peanut butter
  • ½ tsp baking soda
  • 2 small ripe bananas
  • 1 cup rolled oats
  • optional: dairy-free chocolate chips

Directions

  1. Add ingredients to a large mixing bowl and mix/mash to combine, or add to a Vitamix and mix to combine.
  2. Scoop into individual servings onto a parchment paper-lined baking sheet.
  3. Bake at 350 degrees for 20 minutes.
